Richard Hayes who leads the kitchen was born in Euroa, his love for food and cooking began whilst growing up and working in his family’s restaurant.
Richard has since worked in prestigious and award wining restaurants in Melbourne, London and Paris, including Hare & Grace under Raymond Capaldi, Wild Honey under Anthony Demetre and The Ledbury, Knotting Hill under Brett Graham.
In Paris, Richard’s career continued at Restaurant Quinsou and Restaurant Sauvage. And then Atelier Auger where the kind of bread produced makes the best boulangerie-pâtisseries in France green with envy.
